In the Data Feed settings of EZ Inventory, there's an option to specify the minute offset in 5-minute increments:

This is very useful in cases where your supplier's inventory feed is also getting updated hourly at the top of the hour and may take a few minutes to complete.

For example, if your supplier's feed usually gets updated within 5 minutes after the hour, then setting the inventory update schedule to run at 15 minutes after the hour will make sure the source feed data is up-to-date before using it to update your inventory levels in Shopify.
