Why is the Lineitem Vendor in the Shopify order data not updating when I export my orders?

Please note that order data is historical in nature.

This means that if you change a Line Item's Vendor, it only gets applied to new orders and won't automatically be applied to older orders.

Because of this, I'm afraid there is no option to update the Line Item Vendor of past orders.
