You can use a formula similar to the one below in the Calculated Fields to automatically remove numeric characters on export:

"".join([i for i in {{ shipping_address.name }} if not i.isdigit()])

The above example will automatically remove all numbers/numeric characters from the shipping_address.name field.  Simply replace the field part of the formula to do the same to other fields.
